Other than Uighur Noodles, which we eat a few times a week, Hot Pot has been our second favorite type meal here in China. Hot Pot is more or less Chinese fondue. There is a large metal bowl of simmering broth (some extremely spicy and others mild) in the middle of the table. The hot pot is kept simmering while raw ingredients are placed around the table to be cooked. You can order almost anything to be put into your hot pot, vegetables, mushrooms, jiaozi, sliced meat, frozen chicken meatballs, eggs, seaweed, potatoes, chicken feet, you name it you can order it (it is China after all.) So delicious!
